Stuffed Sweet Potatoes

🍴 Serves: 2 portions
Ingredients:
2 sweet potatoes, roasted in the oven
2-3 tablespoons of cooked sweetcorn
2-3 tablespoons of cooked black beans
100g cherry tomatoes, quartered
1/2 red onion, chopped
olive oil to taste
salt and black pepper
2-3 tablespoons Lummus Original
water to taste
🥣 Preparation:
1. Preheat the oven to 180 ºC.
2. Wash the sweet potatoes thoroughly, cut them in half and place them on a baking tray, skin side up. Season with olive oil and salt and bake for about 30 minutes, or until tender when pierced with a fork.
2. In a medium bowl, combine the corn and beans, previously drained and rinsed. Add the quartered cherry tomatoes and red onion. Mix all the ingredients together well.
3. Mix 2–3 tablespoons of Lummus Original with a little water until you get a creamy sauce texture.
4. Serve the potatoes with the vegetable and cherry tomato mixture and drizzle with Lummus Original sauce to taste.
