Bowl Detox

A combination of natural, comforting and nutritious ingredients, designed to aid digestion, replenish energy and bring colour to your plate without compromising on flavour.

🍴 Serves: 2 portions
Ingredientes for the sauce:
2-3 tablespoons Lummus Original
water as needed
Ingredients for the bowl:
1/2 butternut squash, diced
1 broccoli, cut into small florets
1/2 zucchini, cut into half-moons
1 small onion, cut into half-moons
Olive oil to taste
Salt and black pepper
Dried thyme (optional)
2 to 3 tablespoons cooked quinoa
🥣 Preparation:
1. Preheat the oven to 180 °C.
2. Cook the quinoa according to the instructions on the packet and set aside.
3. Place the pumpkin, broccoli, courgette and onion on a baking tray. Drizzle with olive oil, season with salt, pepper and a little thyme (if you like).
Mix everything together well.
4. Bake for 20 to 25 minutes, stirring halfway through, until the vegetables are golden brown and tender.
5. For the sauce, mix 2 to 3 tablespoons of Lummus Original with a little water until you get the desired consistency.
6. Assemble your bowl: start with the quinoa, add the roasted vegetables and finish with the Lummus sauce on top.
7. If you like, add seeds, fresh herbs or an extra drizzle of olive oil.
