Watermelon, Feta + Lummus & Basil salad

The most delicious, fresh recipe for a sunny day 🍉🌿☀️

  • Time: 15 min
  • Serves 2-3
Ingredients:
  • 1/2 Mini Watermelon Chopped in cubes
  • 1/2 Cucumber Chopped
  • 1/2 Block of Vegan Feta Chopped in cubes
  • 1 tbsp Basil and Mint Leaves Chopped
Dressing:
  • 2 tbsp Lummus & Basil
  • 2 tbsp Olive Oil
  • 1/2 Lime juice
  • 1 tbs Cracked Black Pepper
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Maple Syrup
Method:
  1. In a bowl add the chopped watermelon, cucumber, feta and the basil and mint leaves finely chopped.
  2. Then start to prepare the dressing by combining all the ingredients, add to the salad and mix everything until combined.
